Sweet & Savory Crepe Recipe

Ingredients

Batter

1 cup All-Purpose Flour
1 tbsp Granulated Sugar
1 pinch Kosher Salt
1/4 pound of Butter
1 cup Milk
1/2 cup Warm Water
4 Eggs, room temperature

Toppings

Sweet:
– Nutella
– Lemon Juice & Sugar
– Peanut Butter & Banana
– Berries & Jam
– Berries & Whipped Cream

Savory:
– Diced Ham, Jack & Cheddar Cheese
– Smoked Turkey & Gouda Cheese
– Vegetarian: Grilled Zucchini, Eggplant, Mushrooms, Peppers, Tomatoes, Caramelized Onions, Pepper Jack & Mozzarella Cheese

Directions

Batter

  1. Place butter on the stove and cook slowly until it smells like hazelnut (beurre noisette).
  2. In a bowl, add together flour, sugar & salt, and stir until well mixed.
  3. Crack the eggs into the middle of the bowl, and slowly start to mix.
  4. Add half of the milk slowly to the bowl, until you have a smooth paste consistency.
  5. Add the remaining milk and warm water to the bowl.
  6. Add the melted butter. Stir.
  7. Let the batter rest for 15 minutes

To Cook

  1. In a crepe pan, coat with non-stick spray
  2. Spread 2 oz of crepe batter for each crepe
  3. Level batter to cover pan evenly
  4. Cook for about 2 minutes on both sides
  5. Remove from the pan, and add your favorite toppings (sweet or savory).
