    He is responsible for Pelican Hill’s culinary offerings, comprising three restaurants, two cafes, the Resort’s pastry and bakery operations; In-Room Dining to 128 Villas and 204 Bungalows, catering and special event services.

    Chef Dubray grew up in the kitchen of his family’s country house in France’s Loire Valley, where they produced much of their own food. He enjoyed helping his mother prepare big family meals and by the time he was 15, he had enrolled in culinary school, and decided it would be his life’s work.

    He came to the United States in 1980 when he had an opportunity to be part of the opening team for La Vie en Rose, a restaurant in Brea, Calif., and he has been in the Golden State ever since.

As early spring arrives in Newport, Andrea takes you away to Firenze in the heart of Tuscany. On this culinary journey through Firenze and the surrounding hill towns of Tuscany, savor regional a la carte dishes featuring seasonal ingredients, such as spring peas, radishes, artichokes, asparagus and morel mushrooms.

Ranch-to-Resort Spring Specials
Freshly picked from the Irvine Ranch® just eight miles away, an abundant variety of farm-fresh spring products inspire Chef Micah’s a la carte ranch-to-resort daily specials at Coliseum Pool & Grill. Featuring Irvine Ranch asparagus in April, peas in May and fava beans in June, seasonal dishes bring the best of the Orange County’s nutritious local ingredients to your table.

Friday, Saturday and Sunday from 2 to 3:30 p.m.

Andrea Menu Espresso
Wednesday – Sunday
Andrea, locally and nationally celebrated as one of the finest Italian restaurants, invites you to stop by Wednesdays through Sundays for a quick lunch. For just $40 per person, enjoy our two-course menu espresso (express menu) served in 45 minutes or less.

Pelican Grill Tasting Table
The Pelican Grill’s new Tasting Table invites epicureans to be seated right next to the restaurant’s open-concept kitchen in the main dining room. This interactive, chef-led dining experience presents guests with exclusive daily dishes featuring the freshest seasonal ingredients and creative presentations. Pelican Grill chefs prepare the day’s selection of prix fixe specialties before guest’s eyes, then pass each course over the kitchen counter to the adjacent rustic, wooden table set for up to 10 guests. As they converse with the chef across the pass counter, diners savor Napa-inspired cuisine paired with fine California wines.

Offering endless pizza, pasta and gelato for just $10* per child, Coliseum Pool & Grill invites families to celebrate their favorite junior athletes with lunch or dinner any day of the week. Savor locally sourced ingredients in Northern Italian dishes, such as hand-made tagliolini with bay scallops, green asparagus and black summer truffle, or green asparagus soup with soft-poached quail egg, parmesan cheese crisp, taggiasca olive dust and peperoncino oil.

Pelican Grill and Coliseum Pool & Grill bring the all the action of the World Cup Brazil games to you on nine-foot TV screens.
