    He is responsible for Pelican Hill’s culinary offerings, comprising three restaurants, two cafes, the Resort’s pastry and bakery operations; In-Room Dining to 128 Villas and 204 Bungalows, catering and special event services.

    Chef Dubray grew up in the kitchen of his family’s country house in France’s Loire Valley, where they produced much of their own food. He enjoyed helping his mother prepare big family meals and by the time he was 15, he had enrolled in culinary school, and decided it would be his life’s work.

    He came to the United States in 1980 when he had an opportunity to be part of the opening team for La Vie en Rose, a restaurant in Brea, Calif., and he has been in the Golden State ever since.

Learn how to make traditional Italian egg-based pasta dough, as well as lobster tortelli and handmade spaghetti alla chitarra in the Andrea Ristorante pasta kitchen. Join our in-house pastaia, Julia, on Thursdays at 11 a.m. for one hour of hands-on instruction and a delicious two-course lunch…made by you!

Bloody Mary Bar
On Sundays from 10 a.m. – 2 p.m. at Coliseum Pool & Grill, build your own Bloody Mary at Coliseum Pool & Grill. Select your level of spicy with an assortment of hot sauces, then garnish your beverage with flavored salts and favorite toppings, like bacon, jalapenos, pickles and bell peppers.

Pelican Grill Tasting Table
The Pelican Grill’s Tasting Table invites epicureans to be seated right next to the restaurant’s open-concept kitchen in the main dining room. This interactive, chef-led dining experience presents guests with exclusive daily dishes featuring the freshest seasonal ingredients and creative presentations. Pelican Grill chefs prepare the day’s selection of prix fixe specialties before guest’s eyes, then pass each course over the kitchen counter to the adjacent rustic, wooden table set for up to 10 guests. As they converse with the chef across the pass counter, diners savor Napa-inspired cuisine paired with fine California wines.

The Masters Menu
